Hampshire Cod

Ingredients
2lb cod (head, tail and fins removed)
3oz fresh breadcrumbs
11/2oz shredded suet
1/2 finely chopped onion
1 dessertspoon freshly chopped parsley
1 teaspoon freshly thyme
grated rind and juice of lemon
salt and black pepper
pinch ground nutmeg
1 beaten egg
11/2 – 2oz butter

Method
1 Clean the fish inside and out.
2 In a bowl mix together the breadcrumbs, suet, onion, herbs, lemon rind, seasonings and nutmeg, combine thoroughly.
3 Add the egg a little at a time and bind together.
4 Use to stuff the fish.
5 Butter an ovenproof dish thoroughly.
6 Place the fish in the dish.
7 Dot generously with butter.
8 Cover with aluminium foil.
9 Bake at 180 degrees centigrade/gas 4 for 45 – 50 minutes.
