Hartington Chicken

Chicken breast split and stuffed with blue cheese. Hartington, near Bakewell, is known for free-range chicken and as a centre for the production of the blue Dovedale and Stilton cheeses. This dish is very well known locally (2019), both as a butcher's preparation and a pub meal, but is not recorded.
