Leek Porridge

Accompaniments Lancashire, Yorkshire, Cumbria, Durham, Northumberland Boil of chopped leeks with milk and oatmeal.
Original Receipt from 'The Lady’s Own Cookery Book, and New Dinner-Table Directory' of 1844 Leek Porridge. Peel twelve leeks; boil them in water till tender; take them out and put them into a quart of new milk; boil them well; thicken up with oatmeal, and add salt according to the taste.
