A lamb or mutton chop taken right across the loin and therefore double sided.

Known at least since Bradshaw's Illustrated Tourist's Handbook of 1858 which recommended them as a 'succulent speciality' of the town. It is by no means universal that chops sold in Barnsley are now of this form.
