Blackberry Relish

Preserves

Blackberries stewed in vinegar with sugar and sweet spices. An accompaniment for game or duck.

Blackberry Relish

5-6 lbs blackberries
1 tsp salt
1 oz sugar
1 tsp mustard powder
1/2 tsp ground cloves
1/2 tsp ground nutmeg
1/2 tsp ground cinnamon
1 pint vinegar

Make a puree by simmering the blackberries in just enough water to cover them. Strain through a fine sieve, pressing out as much pulp as possible. Put with rest of ingredients in pan and simmer for 10 to 15 minutes. Pour into heated bottles and seal.
