Cheese and Walnut Loaf

Yeast or soda-raised tin loaf containing a high proportion of grated cheese and chopped walnuts.

Cheese and Walnut Loaf

4 oz white self-raising flour
4 0z brown flour
1 tsp baking powder
2 oz butter
4 oz Cheddar cheese, grated
2 eggs, beaten
1/4 pint skimmed milk
2 teaspoons mustard
3 oz walnuts, chopped

Preheat the oven to moderately hot (190C/375F, Gas Mark 5). Place the flours in a bowl with the baking powder. Rub in the margarine until the mixture resembles fine breadcrumbs, then stir in the grated cheese.
Beat together the eggs, milk and mustard and stir into the flour with the walnuts. Mix to a stiff dough.
Spoon into a greased 1 lb loaf tin and bake in the oven for 45 to 50 minutes or until firm and risen. Cool on a wire rack.
