Cumberland Sand Cake

Soda-raised, lemon-flavoured, plain sweet cake made with a high proportion of maize flour.

2 oz butter
4 oz caster sugar
2 beaten eggs
1 oz plain flour
4 oz cornflour
1 teaspoon baking powder
Pinch salt
Pinch grated nutmeg
2 teaspoons lemon juice

Cream the butter and sugar, add eggs and beat well. Fold in the sieved flour, corn flour, baking powder, salt and nutmeg. Add lemon juice and mix well. Bake at 350 deg F for 15 minutes. Dredge top with icing sugar.
