Ovington Fruit Cake

Soda raised cake made with white wheatflour and rice flour, flavoured with grated lemon rind (J.Salmon)

OVINGTON FRUIT CAKE

8 ounces butter
8 ounces flour
8 ounces ground rice or semolina
12 ounces currants
8 ounces castor sugar
3 eggs
2 ounces grated lemon peel
baking powder
milk.

Sieve the flour, ground rice and baking powder together. Cream sugar, butter and eggs. Add fruit and flour mixture and enough milk to make a good dough. Place into a well-greased baking tin in a moderate oven for 30 - 40 minutes.
