Coarse chopped sausage with herbs.

Suffolk Sausages were formerly of considerable fame, so much so that forgeries were suspected and 'Punch' in 1858 could include the disappearance of "real Suffolk sausages chopped and stuffed in Houndsditch" in a list of somewhat unlikely things, along with Shakespearean jokes actually being funny.
